What I learned about the car wasn't limited to tires. I also learned that you don't have to spend thousands on shocks to hang with most anything out there through the corners in a Miata. Right now the car is compliant, with Flyin' Miata sways to keep it together. And it's not just me... a fellow Panoz buddy / Instructor has found the same with his Miata. There are guys at the track who have dumped several thousand dollars into shocks for their Miata... and then they tell you about it. It makes me smile.

7s visually have a smaller lip than 8s do. 8s have a ~1.25" lip, 9s is ~1.75" iirc. 10s have the same lip as 9s, but concave spokes. Not sure on the 7.5s. If you've seen enough wheels, you can visually see the difference between a 7/7.5, 8, 9, or 10.
