Holy ---- me backwards! I just ate the most incredible meal ever. Nice little Japanese and Korean BBQ place. Super hot Korean and Japanese waitresses, little grill in the table, and one of the hot waitresses to cook for you. I had THE best piece of beef I have ever had. I knew it was going to be good when it came out thinly sliced with the most impressive color and marble I have ever seen. All of the sides were also exceptionally good. To top it all off, I had the best sushi I have ever had, and I am a sushi fiend. In retrospect, I should have gotten the Guinness that I was admiring in the picture next to my table.

Just ate some of my favorite chicken that we made yesterday.

For less than $10 worth of chicken and a handful of other ingredients I'll have lunch for a few days.

Crockpot Jerk Chicken

  • 1 large onion, cut into 8 pieces
  • 1 teaspoon ground ginger or 1 tablespoon minced crystallized ginger
  • 1/2 to 1 habanero pepper, seeded, deveined and finely minced
  • 1/2 teaspoon ground allspice
  • 2 tablespoons dry mustard
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons red wine or balsamic vinegar
  • 2 tablespoons soy sauce
  • 2 cloves garlic, crushed and minced
  • 3-4 pounds chicken

Combine onion and ginger in a food processor; process until finely chopped. Add remaining ingredients, except chicken, and pulse until well blended.

I usually put some sauce in the bottom, then start layering the chicken while adding sauce between each layer. Cover, set on low and cook for 6-8 hours.

We've done it a few different ways substituting different peppers and sometimes its so hot it burns my mouth while other times its very mild.

I have two degrees in hotel and restaurant management, and my specialty is fine dining.
I have cooked for two to two hundred people, and I have a few recipes of my own.

I wash my hands at least 17 times when i cook. I yell at people who use tongs for raw meat and continue to use them to flip things on the grill/stove. I've had food poisoning once in my life and that was enough for a lifetime.
